Triple Chocolate Chip Cookies

Nothing says “I love you Doug” like a batch of these cookies. Last weekend was his first game as an assistant coach for the Stanford Football team and I wanted to do something a little extra to say good luck so I stuck a bag of these into his bag before he left.

These are the best Chocolate Chip Cookie recipe I’ve ever found. Chewy and sweet with lots of chocolate. My favorite chocolate chips are Guittard. They are seriously so good and take these cookies over the top.

Next time someone needs a little love- try these!

Triple Chocolate Chip Cookies

1 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) butter, room temperature
1/2 cup brown sugar
6 tablespoons granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
3/4 cup white chocolate chips
3/4 cup milk chocolate chips

Place rack in center of oven and preheat to 350 degrees. Line 2 rimless baking sheets with parchment.

In bowl, sift together flour, baking soda and salt. Set aside.

In large bowl, combine butter, brown sugar and granulated sugar. Beat with wooden spoon until smooth, or at medium speed with blender until smooth. Add egg and vanilla and beat with spoon until well blended, or on low speed in blender. Slowly add dry ingredients and stir just until incorporated. Mix in chocolate chips.

Drop dough by heaping tablespoons onto prepared baking sheets, spacing cookies 2 inches apart. Bake cookies, 1 sheet at a time, until bottoms and
edges are lightly browned, 9 to 11 minutes. Let cookies cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely. Store in airtight container at room temperature up to 3 days. Makes about 24 cookies.

*P.S. The cookies in the picture don’t have white chocolate because I realized last minute I didn’t have any, but they are the best with all 3 kinds of chocolate.

I think it’s worth bringing pleasure and beauty into our daily routines. I invite you take a deep breath and ask yourself how you can make one of your jobs more pleasant or lovely today. You deserve it.

This pearl necklace was my grandma Mary Beesley’s. She was a quirky, tough, lovely lady. She taught me lamb is delicious with mint jelly, even if I refuse to eat the fat chunks like she did. I think of her when I wear this necklace. And I also think it’s lucky when I wear it to football games.

These are the kind of details we can give our characters that make them more real and interesting.
